A farming practice that has a number of benefits, for the environment and the farmer, is becoming more popular. As local producers finish up their harvest, some are choosing to plant cover crops, which soak up excess nutrients and reduce erosion in the spring. Some cover crops, like tillage radishes, will use leftover nutrients in the fall, die over the winter, and then release those nutrients back into the soil in the spring. Washington County farmer Dave Skubal says he’s been planting cover crops for several years, and is seeing a lot more people try it.
